This is the recipe that we started making in bulk for ourselves; which was quickly found and enjoyed by the best of friends and which made us take our food more seriously.

All you need to start:

2 tbsp. olive oil
2-1/4 cups warm tap water
1 tbsp. maple syrup (for boiling water bath)
 

The Process:

Step 1:

Combine oil and warm water.
  • Using a stand mixer, mix in package at low speed.  Increase speed to medium-high for 3 minutes - should take around 5 minutes total.
  • Using a whisk, gradually add package until the mix becomes thick enough to use a spatula. Work with hands for final combining - should take around 8 minutes total.


Step 2:

Lightly oil hands to divide dough into 12 equal balls.
Poke hole in center and shape into bagel. Place on baking sheet with parchment.



Step 3:

Cover bagels with a clean cloth; Rise in a warm place for 60 minutes.
Before bagels are finished rising, bring 12-cups of water to a boil.



Step 4:

Add 1 tbsp maple syrup to boiling water.  Pre-heat oven 425°F.
Place two bagels at a time into the water bath; Boil 30 seconds per side.



Step 5:

Return to baking sheet and sprinkle with toppings.
Bake at 425°F for 20-22 minutes.  It is important to adhere to bake times to prevent dry bagels.



Step 6:

Remove from oven and let cool before eating. Eat within 24 hours or freeze to ensure freshness.

Don't cut them before you freeze them, as they will dry out. 
Personally, we make them and freeze them. A quick microwave for 15 seconds before toasting does the trick.
