Chocolate Chip Oatmeal To Go.  

Ingredients: organic rolled oats, vegan chocolate chips, brown sugar, organic quinoa flour, organic sorghum flour, organic arrowroot starch, organic millet flour, organic cassava flour, organic oat flour, xanthan gum, baking powder, pink salt, psyllium husk, nutmeg

Ucopia Foods is about bringing back food favorites. Easy gluten-free breakfast.  

This mix has always been a regular weekday go to. Once in hearty muffin form its an easy breakfast to consume while on the move. 

Muffin Baking Instructions:

All you need to start:
1/3 cup oil
2 better than eggs (2 tbsp chia/flax meal with 8 tbsp water)
1 cup of plant-based milk
1/2 cup of maple syrup

1 tsp vanilla extract


Step 1:
Preheat oven to 375°F
Prepare Better Eggs 2 tbsp with 8 tbsp water.
Allow to gel for 5 minutes while you grease or line your muffin tin.

Step 2:
Add package mix to wet ingredients.
Stir to completely combine.

Step 3:
Divide batter into 12 regular muffin tins or 24 mini muffin tins.

Step 4:
Bake for 30-35 minutes when the muffins spring back when touched.

Step 5:
Let the muffins rest in pan for 5 minutes and then remove immediately from pan and cool on wire rack to prevent mushiness.

Step 6:
Eat within 48 hours or freeze to ensure freshness. 

 

Power Bar Baking Instructions:

All you need to start:

Prepare Better Eggs 2 tbsp with 8 tbsp water.
Allow to gel for 5 minutes while you grease your 9 in. x 13 in. pan

Step 2:
Add package mix to wet ingredients.
Stir to completely combine.

Step 3:
Pour batter into pan. Allow batter to rest for 5 minutes

Step 4:
Bake for 18-25 minutes when it springs back when touched.

Step 5:
Once cooled, cut into squares or rectangles.

Step 6:
Eat within 48 hours or freeze to ensure freshness.Â
