Vegan Peanut Butter Brownies

We LOVE brownies and thought we'd share this delicious brownie recipe with you :)

Ingredients

  • 2 cups Gluten Free Flour: Use sorghum as a replacement and add 1 tsp xanthan gum
  • 2 cups sugar
  • ¾ cups cocoa powder
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup water
  • 1 cup oil
  • 1 ½ tsp vanilla extract
  • ¼ cup peanut butter

Method

  1. Preheat oven to 350°F.
  2. Add flour, sugar, cocoa, baking powder, and salt to a large bowl. Whisk to combine.
  3. Add water, oil, and vanilla to bowl and combine with a machine or by hand.
  4. Heat peanut butter over low heat until extra soft. Add small amounts of water (about ¼c in total) and stir until a semi-liquid consistency is reached. Set aside to cool.
  5. Line a 8x8 pan with parchment paper, or grease lightly with oil and dust with flour. Layer batter and peanut butter mixture into pan and use spatula to swirl mixtures together.
  6. Baking times may vary. Depending on your pan, baking can take 30 minutes or up to 70 minutes. Check in on your brownies and look for a crackly top and poke test to make sure the inside is clean (almost clean works too for a more gooey brownie!). Allow to cool and slice into squares.

These can be made without the addition of peanut butter if that's preferred.
Also safe to eat raw!
