Lentil & Veggie Brown Rice Stew Recipe

You're gonna eat more of this then you had planned. It's ok veggies don't count.  Takes 1 hour to make the first time and about 45 minutes after that.

Step 1: Dice and sauté the following:

4 medium carrots
2-3 medium leeks
2 celery stocks
2 medium zucchini 
1 large onion (sweet, Spanish or yellow cooking)

Step 2: Cook covered over low heat for 10 minutes. 

Step 3: Add the remaining ingredients below and then bring to boil for 30 seconds. 

3 cloves of garlic (or more if you haven't reached the garlic barrier yet in life)
1 tsp dried thyme (1 tbsp fresh)
1 cup dried lentils (soaked overnight or added once the rice is done if using canned)
1/2 cup dried brown rice
6-8 cups organic broth of your choice or water
Step 4: Reduce heat to simmer and cook uncovered, stirring often for about 30 minutes or until everything is cooked. Taste as needed. 
Step 5: Remove from heat and add ingredients below before serving
1 cup chopped fresh Basil
1/2 cup chopped fresh parsley or cilantro. 
salt and pepper to taste.
