Gluten-Free Vegan Stuffing

Stuffing is the Canadian-equivalent to bread pudding.  We all have those forgotten bagels and bread ends abandon in the corners of our freezer and this is the perfect excuse to use them up.  This recipe can be scaled to suit the size of your pan or party.

6 frozen bagels or buns

2 onions, diced

4 carrots, diced

5 stocks of celery, diced

4 cloves garlic, diced

3 tbsp oil

3 tbsp dried sage

1 tbsp whole coriander seeds

1 tsp dried oregano 

1 apple, diced

1/2 cup pine nuts

2 cups vegetable broth

salt & pepper

Step 1: Defrost & dry out the bread by slicing and allowing to air dry for 24 hours on a wire rack

Step 2: In a large pre-heated skillet, add oil and spices.  Allow to infuse with flavor for 1 minute, stir occasionally 
Step 3: Add onions, carrots, celery, and garlic and simmer until onions are translucent and carrots are not hard
Step 4: Warm oven to 350F
Step 5: Toss skillet items with pine nuts and apple pieces and pour into Stuffing Pan of choice.  Pour vegetable broth over stuffing until 1/2 inch from being submerged
Step 6: Cover with foil and place in oven for 30 minutes
Step 7: Continue to check on stuffing every 15 minutes until liquid is evaporated. If preferred, continue to toss the contents of the tray to encourage the formation of a loaf which is easier to serve & portion.
