2 tbsp lemon juice
2 tbsp honey, maple syrup or agave syrup
1/4 cup unsweetened apple sauce
1/4 cup warm coconut oil (cooled, but melted; works with other oils as well)
add package to the wet ingredients.
Sandwich a ball between two plastic sheets.
Using a rolling pin gently roll out balls to 1/4 in.
Cut to preferred shape.
Place cookies on baking sheet with parchment.
Preheat over to 350°F
Leave cookies to rest on cookie sheet for 10 minutes. Then transfer to wire rack to finish cooling.
This insures a chewy sugar cookie experience.
Keep sealed in air-tight container.
Best eaten within 3 days or freeze immediately.
